Set aside 80ml to baste meatloaves.Add remaining tomato sauce mixture and remaining ingredients to meat. Using your hands, mix thoroughly to combine.Divide mixture among pan holes. Baste with reserved sauce mixture.Bake for about 30 minutes or until cooked through. Stand in a pan for 10 minutes.Meanwhile, place heirloom vine tomatoes on an oven tray. Drizzle with oil and season. Roast for 30 minutes or until tender and slightly collapsed.To make tomato sauce, heat oil in a saucepan over medium heat. Cook onion, eshallots and garlic, until soft and lightly caramelised. Add remaining ingredients. Bring to a boil. Simmer, covered, for 30 minutes. Season. Cool slightly.Transfer to a blender and blend to form a smooth sauce.To make mashed potato, place potatoes in a large saucepan of cold salted water. Bring to a gentle boil. Boil until tender. Drain and allow steam to evaporate.Pass potatoes through a ricer into a clean saucepan. Place over low heat and add butter and cream. Beat with a wooden spoon to combine. Season.Serve sliced meatloaves and mash with tomato sauce and roasted tomatoes. Garnish with micro herbs.
